Monkey crackles















Ingredients (serves 8)

 

  • 2 cups puffed rice cereal
  • 1/4 cup banana-flavoured drink powder
  • 1/4cup icing sugar mixture
  • 1/2 cup desiccated coconut
  • 125g copha, melted
  • Yellow food colouring
  • 24 banana lollies, to serve

 

Method

  1. Line two 12-hole, 1 1/2 tablespoon capacity mini muffin pans with paper cases. Combine cereal, drink powder, icing sugar and coconut in a heatproof bowl. Add copha. Tint with yellow food colouring. Mix to combine.
  2. Spoon tablespoons of mixture into paper cases. Insert a banana into each crackle. Press remaining mixture around bananas to secure (see note). Refrigerate for 2 hours or until set. Serve.

Notes

Use the back of a spoon to press mixture firmly around bananas.
