Ingredients (serves 4)
- 1 1/2 tablespoons caster sugar
- 1/4 cup fresh mint leaves, finely chopped
- 1/2 pineapple, peeled, halved lengthways, thinly sliced
- 1/2 lemon, juiced
- 2 x 100g tubs passionfruit frozen yoghurt
Method
- Combine sugar and mint in a small bowl.
- Arrange pineapple on a platter. Drizzle with 2 tablespoons lemon juice. Sprinkle with mint sugar.
- Serve with scoops of frozen yoghurt.
